knife NEEDS more wear resistance (at the edge, anyway) than nearly any gun part, and rifling requires that the metal be pretty "soft". So does the chamber's abilty to take the expansion of that part of the barrel, caused by the pressures of firing. Too hard steel-too brittle, likely to shatter under such pressures.
